This Fruit Lambic presents a complex, wild sensory profile defined by the intense tropical perfume of organic feijoas. The 2023 vintage showcases a sharp, lactic acidity harmonized with characteristic barnyard funk, leather, and earthy hay notes. Aging in wine barrels contributes a subtle vinous structure and dry oak tannins that complement the fruit’s unique guava and pineapple-like esters. The palate is bracingly tart and bone-dry, underpinned by a lean malt backbone of wheat and pilsner malt. A high, sparkling carbonation lifts the aromatic floral notes of the feijoa, resulting in a refreshing yet deeply sophisticated sour ale with a lingering, acidic finish.
Appearance. Pale gold with a hazy, straw-like hue (SRM 4-6); features a frothy, white, mousse-like head with moderate retention and fine, delicate lacing.
Aroma. High intensity; dominant aromas of fermented feijoa, suggesting tropical flowers, guava, and pineapple. Complex secondary notes of Brettanomyces funk, including wet hay, goat cheese, and aged leather, with a sharp, lemon-like acidic snap and no hop aroma.
Taste. Initial impression is sharply tart and refreshing. The feijoa flavor is prominent but fermented, losing fresh sweetness for a more herbaceous, tropical complexity. Moderate funky characteristics of horse blanket and earth balance the fruit. Bitterness is negligible (IBU <10), leading to a bone-dry, puckering finish with subtle oak and white wine tannins.
Mouthfeel. Light to medium-light body; high carbonation provides a prickly, champagne-like effervescence. Noticeable tart puckering quality with very low alcohol warmth and a clean, crisp mouthfeel devoid of astringency.
