Eau Rouge is a sophisticated Belgian Dubbel that masterfully integrates a generous addition of cherries into a traditional monastic base. The visual presentation is striking, pouring a brilliant crimson-red with a dense, creamy head. On the nose, a rich foundation of specialty Belgian malts provides aromas of toasted bread and caramelized sugar, which are seamlessly layered with intense notes of dark cherries, raisins, and plums. The palate experiences a harmonious balance between malty sweetness and the tart, fruity esters produced by the blend of Belgian yeast strains. Appearance. SRM 15-20. Pours a brilliant crimson-red with an attractive depth. Large, dense, and long-lasting creamy head, occasionally showing a faint pinkish tint from the fruit. Generally clear.
Aroma. Moderately strong intensity with a rich malty character featuring toast and caramelized sugar. High fruity esters dominated by fresh and dark cherries, supplemented by raisins and plums. Low to moderate peppery phenols. Hops are absent.
Taste. Rich malty-sweet flavor of caramel and toast, immediately joined by a distinct cherry sweetness. Yeast-derived esters of dark fruit and mild spicy phenols add complexity. Low to medium-low bitterness ensures the malt and fruit remain prominent. Finishes moderately dry with a malty and fruity aftertaste.
Mouthfeel. Smooth, medium to medium-full body. Medium-high carbonation creates a lively mouthfeel. Low, well-integrated alcohol warmth without any harshness. Creamy texture.
