3 Fonteinen “Intens Rood” is het resultaat van het macereren van handgeplukte hele zure kersen op lambiek gedurende minimaal zes maanden, in een verhouding van één kilogram fruit per liter lambiek, en wordt vervolgens opnieuw gemengd met meer lambiek om een minimale intensiteit van 450 gram fruit per liter te verkrijgen. De krieklambiek vergist nog minstens zes maanden op fles en ontwikkelt zich tot een intense wijnachtige fruitlambiek. Deze op fles gefermenteerde, ongefilterde en ongepasteuriseerde lambiek is volledig natuurlijk en bevat geen kunstmatige sappen, siropen of suikers. PX sherry barrel Kriek

While looking for old sherry barrels, we cannot get lucky all the time. While we will be sourcing barrels directly from bodegas to assure provenance and quality, we had a batch of Pedro Ximenez (PX) barrels that was on the peated side (albeit subdued). As a result, we decided not to use them for Zenne y Frontera, but to blend them with other (fruit) lambikken into geuze and fruit blends. This is the first of such blends to be released. Sour cherries were macerated partly on young peated lambik and partly on two-year old straight lambik in a stainless steel tank. We blended with young and three-year old (!) lambik. 55% of the blend is old lambik and the final fruit intensity is 567 grams of sour cherries per litre.

For this Oude Kriek Intens Rood, 3F macerated sour cherries for almost nine months partly on oak and partly on stainless steel. They chose both young and two-year oude lambics for maceration, originating from four different barrels and seven different brews. They blended with another two young lambics from one barrel and two brews.

The final fruit intensity is 458 grams of sour cherries per litre of Intens Rood. A part of this blend was bottled on 750ml bottles and a part on magnums. 100% 3 Fonteinen.

A Lambic abban különbözik a legtöbb sörtől, hogy a Zenne-völgyben őshonos vad élesztők és baktériumok erjesztésével, nem pedig a gondosan tenyésztett sörélesztő-törzsekkel történik az erjesztés. Ez az eljárás adja a sör jellegzetes ízét: száraz, boros és almaboros, gyakran savanykás utóízzel. A típus a gyümölcsös változatai ismerősen csenghetnek. Az egyik a Framboise, mely málnával együtt savanyított sör valamint a Kriek, ami meggy hozzáadásával készül, de ezek mellett igen népszerű alapanyag az alma, szőlő és a szilva is.

Craft Beer: 3 Fonteinen - Oude Kriek Vat Barrel 20-19 Fresh Craft Beer from our Bottle Shop and Taproom: 3 Fonteinen “Intens Rood” (Intense Red) is the result of macerating hand-picked whole sour cherries on lambic for at least six months, in a proportion of one kilogram of fruit per litre of lambic, and is then blended again with more lambic to obtain a minimum intensity of 450 grams of fruit per liter. The kriek lambic ferments in the bottle for at least another six months and develops into an intense wine-like fruit lambic. This bottle fermented, unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley!
