Brasserie ST.Bernard - Brouwerij St Bernardus
1900 - 1930 Begin de jaren 1900 vluchtten de Trappisten van de Catsberg (Mont des Cats) naar Watou. Ze namen er hun intrek in boerderij ‘Patershof’ (ook wel gekend als ‘Courtewyle’), op een boogscheut van de huidige brouwerij. De boerderij werd omgedoopt tot ‘Réfuge de Notre Dame de St.Bernard’. Réfuge is dan ook het Franse woord voor een toevluchtsoord. De reden voor hun verhuis? In Frankrijk moesten ze belastingen betalen op hun opbrengsten en in België was dat nog niet het geval. De geestelijken zullen er kaas maken.
1930 - 1934 Tijdens deze jaren verbeterde de houding tegenover de geestelijken in Frankrijk. De paters van Mont Des Cats besloten hun activiteiten terug te trekken uit België en terug te keren naar Frankrijk. De kaasmakerij werd overgenomen door Evariste Deconinck. Later werd de Réfuge verkocht aan het OCMW van Brugge.
1934 - 1946 Tijdens deze jaren bouwde Deconinck de kaasmakerij verder vanuit de huidige guesthouse ‘Brouwershuis’ aan de Trappistenweg. De kaas werd verkocht onder de merknaam ‘St.Bernard Watou’ en ‘Port Salut de Watou’.
1946 - 1992 Kort na de tweede wereldoorlog kreeg Evariste Deconinck de vraag van de trappisten van Westvleteren om hun trappistenbieren te commercialiseren en te brouwen onder licentie. De oorspronkelijke licentie overeenkomst werd getekend voor een periode van 30 jaar. De brouwmeester Mathieu Szafranski (van Poolse afkomst) verhuisde mee en bracht naast de knowhow, ook de recepten en de befaamde St.Sixtus gist mee. Er werd een nieuwe brouwerij opgetrokken naast de kaasmakerij. In 1959 werd de kaasmakerij verkocht, althans de installatie en de merknaam werd overgelaten aan de melkerij St.Bertinus in Poperinge, later opgaande in de groep Elvapo. In 1986 nam Belgomilk deze activiteiten over. Begin de jaren zestig stapte de man van Bernadette Deconinck (dochter van Evariste), Guy Claus, in de brouwerij en werd opnieuw onderhandeld met de abdij van Westvleteren om de licentie overeenkomst te hernieuwen. Dit gebeurde in 1962 voor een nieuwe periode van 30 jaar, dus tot 1992.
1992 - 1998 In 1992 kwam een einde aan de overeenkomst omdat de Trappistenbouwerijen beslist hadden de kwalificatie "Authentic Trappist Beer" enkel nog toe te kennen aan bieren gebrouwen binnen de muren van de abdijen. Vanaf dan werden de bieren verkocht onder de merknaam ‘St.Bernardus’. Verder was deze periode er vooral één van onzekerheid en een nogal moeilijke zoektocht om een goede doorstart te maken van de brouwerij onder de nieuwe merknaam.
 
1998 - 2018 In 1998 nam Hans Depypere de brouwerij over. Langzaam maar gestaag zette Hans de brouwerij terug op de rails. Onder zijn bewind evolueerde de brouwerij op twintig jaar tijd van een paar duizend hectoliters tot circa 40 000 hectoliters verkoop (2017). Er waren hiertoe heel wat investeringen nodig met als voorlopig eindpunt de opening van een volledig nieuwe vleugel in 2018, waar ruimte is voor extra magazijnen, een nieuwe brouwerijwinkel, feest-, congres-, en seminariezalen, nieuwe ontvangstruimte voor de brouwerij rondleidingen en als klap op de vuurpijl een indrukwekkende 360° rooftop bar annex degustatieruimte, met de welluidende naam ‘Bar Bernard’.

En el año 1945 el abad del monasterio trapense St. Sixtus de Westvleteren (uno de los siete monasterios que hoy todavia elaboran cerveza bajo la denominación “trappist”) preguntó a su buen amigo Evariste Deconick, propietario de una pequeña fábrica de queso en Watou, si él quería hacerse cargo de la parte comercial de la actividad cervecera del monasterio. Así nació la cervecería St. Bernardus. Los monjes elaboraban sus cervezas únicamente para consumo propio y para los huéspedes de la abadía; por otro lado, la cervecería St. Bernardus, bajo el estricto control de los monjes trapenses y con sus recetas, elaboraba y vendía estas cervezas con el nombre de St. Sixtus Westvleteren, durante casi 50 años, pagando un canon importante a los monjes trapenses por el uso de su nombre.
En el momento de crear la denominación “Authentic Trappist Product” las cervezas de St. Bernardus, por elaborarse fuera del monasterio, no pudieron acogerse a esta denominación y, para evitar malos entendidos, los monjes pusieron fin a esta cooperación de muchos años. Por eso hoy se siguen elaborando las cervezas trapenses St. Sixtus Westvleteren por un lado, cervezas que solamente se venden en el bar “De Vrede” (”La Paz”), local situado frente al monasterio, y a los vecinos, que hacen cola en la puerta del almacén de la abadía. Por otro lado están las cervezas St. Bernardus, elaboradas con la misma tradición de hace 50 años y con el mismo cuidado, afortunadamente a disposición de todos los consumidores.
Siguen fieles a la tradición de nombrar sus cervezas por el orden de la comunidad monástica, siendo la Pater la más ligera, seguida de la Prior y la Abt (abad), la más fuerte. La St. Bernardus Tripel es una creación propia y no entra en este esquema.
Se ha comprobado que el agua de Watou, pequeño pueblo cercano a Poperinge, centro belga de la producción de lúpulo, tiene características muy adecuadas para la elaboración de cerveza. Estudios científicos han constatado que el agua que sale de sus pozos proviene de la zona francesa de St. Omer y de lluvias caídas en los tiempos de Juana de Arco, filtrándose por diferentes niveles de la tierra.
La gama de cervezas de abadía St. Bernardus constituye uno de los tesoros de la cerveza belga, conocido por muy pocos, pero verdaderamente apreciado por quien lo prueba.
