Yin is one out of two special collaborations we’ve brewed for Planet Oedipus 2018! This year we joined forces with To Øl & Brouwerij Kees and made two beers that underline the friendship we have together.
Dry Hopped Saison
Yin is brewed in collaboration with our Danish friends from To Øl and of course had to be something hoppy. Besides the inevitable hoppiness, the beer also had to have an interesting yeast profile. Going back and forth for a bit we finally decided to brew an Imperial Saison with a totally pale grist with good portions of wheat, rye and oats, but then dry hop it like a DIPA. We mostly late and dry hopped with Simcoe, Citra and Mosaic to create tropical fruit flavors. The addition of some Styrian Goldings in the hop back and Saaz in dry hop give the beer nice grassy and herby aromas. In the dry finish you also taste some fruity and peppery notes thanks to the fermentation with a Saison yeast.
A little side note: To Øl has brewed Yin’s twin, called Yang obviously. Yang has the same flavor profile, though a different label. The Danish are known for style and these guys definitely hold up to that, so we decided to each create a label that’s inspired by their artwork and vica versa.
