The most famous among the fruit beers is without doubt the Kriek.

On a warm summer day, a lorry coming from the auction at Sint-Truiden delivers 4.000 kgs of fresh Kellery cherries to the brewery. The brewery staff will then

about 150 kgs of fruits in oakwood or chestnutwood barrels which can contain 650 litres of lambic and which have been cleaned some days before.

These barrels are filled with healthy lambics which are more or less one and a half year old. These are not so easy to find, because many beers are still ill at that age. These oily beers will have to mature for some months in the main barrel. When the Kriek barrels are filled with the fruits and with the lambic (about 500 litres), the hole in the barrel is closed with a sheet of paper in order to avoid contact with impurities.

Five days later, the fermentation starts. The sugars from the lambic and from the fruits bring about the activity of the yeasts which are concentrated in the wood and in the skin of the fruits. A marvelous pink or red foam decorates the old barrels in the cellar.

Normally, the fermentation stops around the 10th of August. The barrels are then closed and the acid lambic begins to extract the taste and the colour from the fruits. Flies and mosquitoes haunt the cellars and are likely to provoke bad infections. Due to the presence of the home spider, however, a natural predator which is more efficient than any insecticide, the Cantillon Brewery presents a natural equilibrium which enables us to produce our beers.

The fermentation of the Kriek in the bottle generally starts in the beginning of October. Two barrels of Kriek from the first extraction and two from the second are pumped into a huge barrel. (The second extraction is obtained by filling the barrel for a second time in order to extract as much from the fruits as possible). It is also possible to blend a certain quantity of young lambic with the Kriek in order to obtain a second fermentation in the bottle. The Kriek goes through a natural saturation, normally after three to five months in the bottle. We recommend to drink the Kriek within one year after the bottling.

The fermentation will change the primary taste of the product and the Kriek will be dominated by the character of the lambic. The red colour will change into more oily shades. This is, however, a personal point of view. Some customers conserve their Kriek for a long time and like it that way. Kriek is a traditional summer beer. It is a very thirst-quenching beer which tastes deliciously with a big slice of brown bread with white cheese, radishes, onions and chives.

Years ago, people who drank Kriek in a pub were also given two lumps of sugar and a stoemper on a small plate. With the stoemper, the customer could crush the sugar on the bottom of his glass and sweeten it in a natural way in order to eliminate the sour taste. Ver menos

Bière au goût acidulé de fruits rouges, subtiles saveurs d’amandes. La Kriek présentera un maximum de "fruité" si on la déguste jeune. L’âge permet au Lambic de s’exprimer pleinement et ce, au détriment du fruit. Les griottes, certifiées bio, viennent de Turquie. Les fruits sont assemblés avec un Lambic de 20 mois d’âge en moyenne, à raison de 200 g de fruits par litre. La griotte étant un fruit puissant, il faudra choisir un Lambic avec suffisamment de caractère pour s’harmoniser avec le fruit. Après une macération de deux à trois mois, le Lambic aura extrait couleurs, arômes et saveurs des griottes. Il sera alors assemblé avec un Lambic d’un an d’âge, lequel amènera les sucres nécessaires à la seconde fermentation en bouteille. La brasserie Cantillon travaille exclusivement avec des fruits frais et comme pour le vin, on peut parler pour les bières de Cantillon d’un effet millésime. La météo joue un rôle majeur dans la maturité et la qualité du fruit, raison pour laquelle une bière à fruit sera légèrement différente d’une année à l’autre.

The fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since sour cherries have a very pronounced taste it is necessary to select a lambic that has enough character so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the sour cherries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle. We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. Prevailing weather conditions have a major impact on the ripeness and quality of the fruit, and this is why the taste of the brewery’s fruit-based beers will differ slightly from one year to the next.

" La Kriek à l'Ancienne par Cantillon Une tradition séculaire de fermentation spontanée et d'assemblage ancrée dans la vallée de la Senne en Belgique. Une fois brassé, le moût est transféré dans une cuve ouverte évasée peu profonde (un koelship) pendant 24 heures pour permettre une insémination par des levures sauvages ambiantes avant d'être transféré dans des barriques pour vieillissement: c'est le processus de fabrication du Lambic. On réalise ensuite une gueuze par l'assemblage de Lambics d’âges différents où le plus jeune contient encore suffisamment de sucres pour permettre une carbonatation naturelle après la mise en bouteille. Mais avant ça, 200 grammes par litre de griottes, ou cerises acidulées (kriek, en flamand), sont ajoutés dans l'assemblage pour plusieurs semaines de macération. La Kriek de Cantillon exprime un goût acidulé de fruits rouges, avec de subtiles saveurs d’amandes. Elle présentera un maximum de "fruité" si on la déguste jeune. La puissance de ce fruit requiert un Lambic de caractère pour une parfaite harmonie. Après une macération de deux à trois mois, le Lambic aura extrait couleurs, arômes et saveurs des griottes. Il sera alors assemblé avec un Lambic d’un an d’âge, lequel amènera les sucres nécessaires à la seconde fermentation en bouteille.
