Die Gueuze von der wohl authentischsten Lambic Brauerei, überhaupt: Brasserie Cantillon. Sie ist ein Blend aus ein-, zwei- und dreijährigem Lambik, das in der Flasche nachgegoren ist. Während der reife, 3 jährige Lambic dem Bier die funky wilden Aromen hinzufügt, sorgt der "junge" einjährige Lambic für die benötigte frichtige Frische und Nachgärung in der Flasche. Aus dem geblendeten Lambic kann so die karbonisierte Gueuze entstehen. Die angenehm frische Säure und Fruchtigkeit fügt sich hervorragend in die herben Noten der wilden Hefe und des Holzfasses. Dieses Bier reift auch wunderbar in der Flasche nach, so dass eine längere Lagerung zuhause sinnvoll sein kann.
